Oyster Knife "Chesapeake Sidewinder"
I started making Sidewinders because I learned most farm raised oysters are harvested earlier than wild oyster with slightly fragile shells. The fragility of the shell makes opening from the hinge harder and more dangerous. (The shells can break) The Sidewinder is based off of what the oysters shuckers from the Chesapeake Bay do where they ease the knife through the side and pry it open that way.
